When I set up my tank just over 18 months ago I spread out the gravel in a sloping fashion, deeper at the back than the front of the tank. Now, over time, the level of the gravel seems to have evened out and the surface is all flat & level instead.

Short of stripping down the tank and starting again from scratch, how do I restore the slope of the gravel? Would simply adding more gravel towards the back of the tank help? I don't want to do anything that will disturb the growth of the plants as I've got everything growing nicely.

When you do a gravel clean just sweep the gravel towards the back so it slopes again. It will always even out over time.
